I am knitting with Joann's Sensations Rainbow Boucle yarn, and I wanted to make a triangle stitch design, seed stitch, (etc etc) on it. Will it be hard to see? Thanks!

Yes. Boucle yarn is already textured so a texture design gets lost. Best for stockinette, maybe a basket weave type pattern.

Yeah, boucle generally disguises any design you put in there. You can try, but it will be subtle. I don't think seed stitch would show up anymore than garter, but you might be able to purl something on a background of knit, depending on how fluffy the yarn is.
