Making the most out of very little yarn...

Does anyone know any stitch patterns that maximize the amount of fabric you can get from a ball of yarn?

I know drop-stitching (http://www.diynetwork.com/diy/na_knitting/article/0,,DIY_14141_3125592,00.html)and just working on larger needles/lacier patterns can max out length/width... anyone know any other patterns/tips/tricks?

Using larger needles. You make less sts/row per inch, so they generally use less yarn. I can make a sweater out of about 800 yds where the pattern on small needles might call for 1200 yds.

You can often block things bigger with animal fibres.

just like with the drop stitch patterns, lace will use less and you can block it bigger.
